Shaved Zucchini and Radish Salad with Mint

This is why I love my garden so much. This salad cost practically a pittance because most of the ingredients were grown in my backyard, and the rest was sourced from the farmers markets. $1 for a bag of lemons, $2 for a massive handful of zucchini!

The idea for the recipe (mainly the lemon) came from a Donna Hay cookbook. So, thank you for inspiring this dish Ms Hay!

Zucchini Radish Salad 003

Ingredients serves 1 or 2 people

1 small very fresh zucchini

about 8 radishes

handful of lettuce (I used the lovely butter lettuce seedlings from the garden)

1 lemon, cut in half

salt and pepper

sprig of garden mint

a glug of good olive oil

Method

Put the lemon on a hot ridge grill, cut side down until it becomes caramelised

Meanwhile use a bean peeler to thinly slice the zucchini, cut the radish finely and arrange in a bowl with all the other ingredients. Toss.

Serve with the lemon wedges on the side, perhaps with some crusty bread to soak up the dressing.

I’ve also used radish sprouts instead of radishes in this salad

    That’s so great you grow your own veggies! You do save a lot of money (even though the cost is a bit of work)- but it does definitely pay off! What’s your favourite thing to grow?

    Hello Michelle,
    Thanks for finding us! Your blog looks great. Unfortunately the competition is open only to Brisbanites – mainly so we don’t have to courier a very heavy box around Australia! But, maybe if you want to enjoy a holiday in the sunshine state and pick it up then we’ll happily include you in the comp!
    We’re only JUST starting to grow vegetables after growing herbs for a while. Herbs are easy, but the veges keep getting chewed on by the possums! We just lost all our capsicums last night :( But it’s great fun!

    I am jealous of your crop! All I seem to be able to manage to grow at the moment (at Heritage Park) is peas and beans. And my dog dug up my herb garden! The salad looks great! Love the grilled lemons!

    Oh our neighbourhood possums keep nomming our garden too! it’s annoying! i’ll have to try peas and beans, i”ve tried snow peas a few times, but they wilt before they get big enough. Definitely try any lettuce because they are REALLY easy and herbs are simple as. :) KALE has been fabulous too!
